Pancit Palabok
Pancit Palabok is a Filipino noodle dish made with rice noodles, shrimp sauce, and various toppings, prepared by boiling, sautéing, and garnishing.

Instructions
- Soak the rice noodles in water for 30 minutes, then drain.
- In a pan, heat cooking oil and sauté garlic and onion until fragrant.
- Add diced pork belly and cook until browned.
- Add shrimp and cook until pink.
- Pour in shrimp broth and fish sauce, then bring to a boil.
- Stir in annatto powder for color.
- Add cornstarch mixture to thicken the sauce, stirring continuously.
- In a separate pot, boil water and cook the soaked rice noodles for 2-3 minutes, then drain.
- Place cooked noodles on a serving platter and pour the shrimp sauce over them.
- Top with fried tofu, sliced hard boiled eggs, crushed chicharron, and chopped spring onions.
- Serve with lemon wedges on the side.
Prep
- Soak rice noodles in water for 30 minutes.
- Prepare shrimp broth by boiling shrimp shells in water.
