Kare-Kare

Kare-Kare is a Filipino stew made with oxtail, vegetables, and a rich peanut sauce, traditionally served with shrimp paste.

Instructions

  1. Boil the oxtail in a large pot with beef broth until tender, about 2-3 hours. Skim off any scum that rises to the surface.
  2. In a separate pan, heat cooking oil and sauté the onion and garlic until fragrant.
  3. Add the peanut butter to the pan and stir until well combined with the onion and garlic.
  4. Pour the annatto water (strained) into the pan and mix well.
  5. Add the sautéed mixture to the pot with the oxtail and stir to combine.
  6. Add the eggplant, banana blossom, and green beans to the pot and cook until the vegetables are tender.
  7. Season with salt and black pepper to taste.
  8. Add the bok choy and cook for an additional 2-3 minutes.
  9. Serve hot with shrimp paste on the side.

Prep

  • Soak annatto seeds in warm water for 30 minutes before cooking.
