Kare-Kare
Kare-Kare is a Filipino stew made with oxtail, vegetables, and a rich peanut sauce, traditionally served with shrimp paste.

Instructions
- Boil the oxtail in a large pot with beef broth until tender, about 2-3 hours. Skim off any scum that rises to the surface.
- In a separate pan, heat cooking oil and sauté the onion and garlic until fragrant.
- Add the peanut butter to the pan and stir until well combined with the onion and garlic.
- Pour the annatto water (strained) into the pan and mix well.
- Add the sautéed mixture to the pot with the oxtail and stir to combine.
- Add the eggplant, banana blossom, and green beans to the pot and cook until the vegetables are tender.
- Season with salt and black pepper to taste.
- Add the bok choy and cook for an additional 2-3 minutes.
- Serve hot with shrimp paste on the side.
Prep
- Soak annatto seeds in warm water for 30 minutes before cooking.
