Chicken Sotanghon

Chicken Sotanghon is a Filipino noodle soup made with vermicelli, chicken, and vegetables, simmered in a savory broth.

Instructions

  1. Heat cooking oil in a large pot over medium heat. Sauté garlic and onion until fragrant.
  2. Add chicken strips and cook until lightly browned.
  3. Pour in chicken broth and bring to a boil.
  4. Add fish sauce, soy sauce, and black pepper. Stir to combine.
  5. Add julienned carrots and shredded cabbage. Simmer for 5 minutes.
  6. Add soaked sotanghon noodles and cook for another 3-5 minutes until noodles are tender.
  7. Adjust seasoning if necessary. Remove from heat.
  8. Serve hot, garnished with chopped green onions.

Prep

  • Soak sotanghon noodles in water for at least 30 minutes before cooking.
