Chicken Sotanghon
Chicken Sotanghon is a Filipino noodle soup made with vermicelli, chicken, and vegetables, simmered in a savory broth.

Instructions
- Heat cooking oil in a large pot over medium heat. Sauté garlic and onion until fragrant.
- Add chicken strips and cook until lightly browned.
- Pour in chicken broth and bring to a boil.
- Add fish sauce, soy sauce, and black pepper. Stir to combine.
- Add julienned carrots and shredded cabbage. Simmer for 5 minutes.
- Add soaked sotanghon noodles and cook for another 3-5 minutes until noodles are tender.
- Adjust seasoning if necessary. Remove from heat.
- Serve hot, garnished with chopped green onions.
Prep
- Soak sotanghon noodles in water for at least 30 minutes before cooking.
